Thinning out the clusters

 

Removal of late ripening bunches.

This operation is also known in France as the “green harvest” and is usually performed during the veraison period in August. It involves removing by hand the clusters that have remained green and will therefore not ripen in good time.

This operation does three things:

- it lets the air circulate around the clusters

- it regularizes the state of maturity by eliminating late-ripening bunches

- it controls overproduction in young vines or in particular years, which could be detrimental to quality.
